A test to determine the percentage of petite (respiration-deficient) cells in your yeast sample. Although healthy yeast cells always generate petites at a low frequency, a large number of petite cells will considerably slow fermentation and is an indication of an unhealthy population. Multiple samples of yeast slurry can be analyzed concurrently using a tetrazolium chloride overlay procedure to score for petite colonies.
